Antioxidants in food - from science to shelf

There is increasing interest in antioxidants and their potential health benefits. Antioxidants are molecules which can prevent or slow down oxidative damage, helping to prevent disease. Current research suggests that phytochemicals also play a role in anti-ageing, cognitive function and weight management. It is these potential health benefits that is driving the identification of existing or new ingredients and their incorporation into new products in the growing functional food arena.
