Prof. Koen Dewettinck of the 'Cacoalab' at Ghent University will describe the key components of the chocolate matrix and their microstructural functionality. We also get to taste some artisanal chocolates from renowned chocolatier Olivier Molitor!

Since 1999 Prof. Koen Dewettinck has been head of the Laboratory of Food Technology and Engineering (http://www.fte.ugent.be/) at the University of Ghent, Faculty of Bioscience Engineering. In June this year Ghent opened a dedicated ‘Cacaolab’ for studying the properties of chocolate.
