Codex Alimentarius
The latin for food code, the Codex Alimentarius is a series of food standards and texts developed by the Food and Agricultural Organisation of the United Nations (FAO) and the World Health Organisation (WHO) to for the protection of the consumer when food is internationally traded.
Guidance to food legislation
Food regulations have been set in law to ensure adherance to food standards. The Food Standards Agency provides guidance to food legislation.
Food legislation from the European Union

Hazard Analysis and Critical Control Points (HACCP)
HACCP is an internationally recognised system of food regulation with the mechanism to identify potential hazards before they occur. The Food Standards AGency provides information on an implementation strategy.
