Dry martini - one of a series of microscopic images of alcoholic drinks taken by the chemistry department at Florida State University, US, showing the conversion of crystallised carbohydrates into simple sugars and glucose. The streaks in this martini image could be due to high levels of essential oils or possibly due to tannin-like compounds which give rise to its bitterness.
