Introduction

Mankind's longstanding but failed attempts to make water and oil mix together have nevertheless led to some surprisingly useful products and ideas. The talk will explain what these cloudy substances that we now call emulsions actually are. And how we can prevent the oil and water they are composed of from separating for long enough to make use of them
