Introduction
Many of the common and recurring food safety incidents experienced by the food industry are often traced back to deficiencies in the site’s risk assessment which can often lead to an overestimation of the severity of a food safety issue. Looking to the future a much more pragmatic and realistic approach to risk assessment is required to protect your brand, minimise unnecessary product recalls and costs.

Robust risk assessment is the foundation of any food safety control plan and the cornerstone of HACCP. Your HACCP assessment needs to consider the four main hazard classes; allergens, physical, chemical and microbiological with emphasis on the specific attributes of your product and process. This seminar will address the practical considerations of food safety risk assessment using real-life scenarios. It will also provide an overview of the key aspects that should be considered in risk assessment for the different hazard classes from a proactive and reactive perspective.
